Better Than Your Grandma's Greens
1 to 2 bunches of Greens (collard, mustard, kale) washedham hock or low sodium bacon
water or broth of choice
You can do this on the stove top or in the crock-pot. I prefer crock-pot. I have also substituted bacon/ham hock with porkloin.
Place washed greens in pot (or crock-pot). Cover 3/4 of the greens with water/broth. Place bacon on top of greens or place ham hock in pot. Bring to boil and then turn down to medium heat - you want to keep them boiling but not on high heat. Cook all afternoon. If cooking in the crock-pot, cook on high all afternoon. Watch the liquid level so that it does not boil off completely. You can add more liquid if this happens. Season to taste with garlic, salt/pepper if you prefer.
We like to eat this like a soup because all the nutrients will be in the pot-liquor. Sass says this is her favorite soup.

My Mom's Yummy Pinto Beans
Rinse 1lb. Pinto beans
Boil
beans with:

pinches of baking powder
6
slices diced bacon
1 to 2 Serrano peppers (1 if you don’t like it too spicy)
1 to 2 Serrano peppers (1 if you don’t like it too spicy)

cloves garlic
1
small can of tomato sauce
1 onion
diced
1 can diced tomatoes
1 bunch cilantro
1 can diced tomatoes
1 bunch cilantro
8 cups water
Salt to taste
Salt to taste
Simmer until beans are cooked.
